California MexicanSpanish Cookbook $14.26 Bertha HaffnerGingers 1914 California MexicanSpanish Cookbook is a delightful collection of Mexican recipes. As she notes in her Introduction, Spanish dishes as they are known in California are really Mexican Indian dishes. Bread made of corn, sauces of chile peppers, jerked beef, tortillas, enchiladas, etc., are unknown in Spain as native foods; though the majority of Spanish people in California are as devoted to peppery dishes as the Mexicans themselves, and as the Mexicans speak Spanish, the foods are commonly called Spanish dishes. The dishes represented are Mexican dishes as they have come to be known across America and they will be a welcome addition to any kitchen. The volume contains the first known, Englishlanguage recipe for tacos. The Puglian Cookbook By Todorovska, Viktorija $24.44 The cuisine of Puglia is famous for being among the best in Italy. Puglian food is deeply rooted in the traditions of this southern Italian region, its geography, and its history as the breadbasket of Italy and the largest producer of olive oil. In this cookbook, beautifully illustrated with recipe and preparation photos as well as images from Puglia itself, firsttime author Viktorija Todorovska (a Chicagoan who studied cooking at the famed Florentince culinary school Apicius) has created a memorable introduction to this unsung cuisine. Puglian cookings two great benefits are of huge interest today: its very simple, usually requiring little technique and basic prepartion, and its incredibly healthful, as its based largely on olive oil and fresh vegetables. Puglian cooking as Todorovska present it here respects the integrity and quality of the ingredients, which should be as fresh high quality as possible. The New Grays Wild Game Cookbook: A Menu Cookbook $22.62 Game is ultimately the most American ingredient, the only possible food capable of establishing itself as a defining element in a true American cuisine. So writes Rebecca Gray in the Preface of The New Grays Wild Game Cookbook, and for the next 61 menus and 180 individual recipes she gives us what amounts to a celebration of wild game as the ultimate gourmet food. Here, in abundance, is the joy and exhilaration of preparing exquisitely matched accompaniments to beautifully prepared main dishes of venison, wild fowl, upland birds and other choice meats brought to the table by the North American hunter. Laid to rest, through anecdote, personal experience and technical exposition, is any vestige of the intimidation a cook might feel when faced with a justbagged bird. Extensively revised and updated from the original, The New Grays Wild Game Cookbook, in addition to separate, menufilled chapters on Venison, Water Fowl, Upland Birds and Mixed Bag (a collection of menus for such diverse prizes as wild sheep, mountain goat, bear, wild boar and rabbit), contains detailed and stylishlywritten chapters on Game Care (not the usual fielddressing and cutting instructions, but a carefullyresearched and wittilypresented discussion of what matters most to the cook) and A Few Suggestions (advice and opinion that respects the readers own experience while passing along nearly thirty years of absorbed interest in fine preparation of tasteful wild game meals). The New Grays Wild Game Cookbook treats wild game in its truest and broadest context. Wild game is that rarest of culinary ingredients: something that, quite literally, money cannot buy. Rebecca Gray knows this, and every recipe here celebrates it. So will anyone lucky enough to be served its menus. The Standard Wine Cookbook $35.04 The Standard Wine Cookbook, by Anne Director, is the perfect addition to any cooking library. Director has recorded hundreds of food and drink recipes using wine from around the world, each of which is a time tested favorite. Although wine loses its alcohol when subjected to heart, it can still give any dish heightened flavor and aroma, the basic rule to remember is that if you can taste the wine in the food when it is done, you have used too much. Sherry is the perennial favorite for cooking. It is especially good in soups, and with fish, shellfish, chicken and ham. In general, red table wines are used most successfully in dishes with red meats, and whites with white meats, chicken and seafood. Director encourages cooks to experiment. Each wine has an individual flavor and character. Some of the recipes included are French Onion Soup made with Sherry, Cranberry Salad Mold made with Claret, Wine Butter Sauce for vegetables made with Sherry, Red Wine Beefsteak Pie, and Fruit Wine Shortcake. All of the dishes are economical and easy to prepare. Many date back hundreds of years. Suggested wines are listed by their generic names.
