
Cauliflower recipe:?
I saw this on an old episode of “Frugal Gourmet” he used the whole head of cauliflower, just cutting out the middle part of the “stalk” and stuffed it with other ingredients. I don’t remember if he steamed or baked it. Does anyone know any ideas of how to make that dish?
I have a few of his books, and found this recipe in what I think was his very first cookbook. I hope it is what you’re looking for: ” Baked Cauliflower” by Jeff Smith “The Frugal Gourmet” Ingredients: 1 head cauliflower, 2 beaten eggs, Salt & pepper to taste, 2 tablespoons freshly grated Parmesan or Romano cheese. In a stainless steel vegetable steamer, steam the cauliflower for about 15 minutes or until tender. When tender, remove it from the steamer & place in a casserole, with a cover, just large enough to hold the head. Pour the egg over the top of the cauliflower, add salt & pepper, & top with cheese. Bake, covered, at 375 degrees for 10 minutes, or until the cheese has melted.
